Best Potato Salad ever



My daughter loves potato salad. She can eat for breakfast, lunch and dinner,  because of that, I don't make it more often.

This potato salad is the best recipe, I finally have our recipe for good.

 
Ingredients:

4 cups cubed peeled potatoes

1 celery rib, chopped small

1/2 cup or small onion, chopped small

1/4 cup sweet pickle relish, chopped

3/4 cup mayonnaise

1 teaspoon mustard

1 teaspoon salt

1/3 teaspoon celery seed

4 hard-cook eggs, sliced

1/4 teaspoon paprika


Directions:      
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and cool to room temperature.
In a large bowl, combine the potatoes, celery, onion and relish. In a small bowl, combine the mayonnaise, mustard, salt, celery seed and pepper. Pour over potato mixture and toss to coat.
Cover and refrigerate until chilled. Top with eggs and sprinkle with paprika.

The stuffing can be anything healthy and what you love. You an use Shells. Here is the same recipe I used except this one I used shells. Spinach & Cheese stuffed pasta

This recipe can be made ahead of time, refrigerated overnight. It is almost restaurant quality.

Chocolate Chip Cookie Dough With Cream Cheese

I saw this recipe and I wasn't sure my kids will eat cream cheese. I end up trying the recipe and I didn't tell the kids about the cream cheese:) They loved it! You can't really test the cheese. I found the recipe here. Recipe

Parmesan, Olive oil & Basil Bread



 
Ingredients:
 
4 cups Bread flour
2 cup lukewarm water
1 packet active yeast
2 teaspoon salt
3/4 cup olive oil
1 cup parmesan cheese
 
          In a large Bowl, add luke warm water and yeast. Let it sit for ten minutes. Add salt, flour, and 1/4 cup of olive oil.  Using your hands knead the dough, till well mixed. Sprinkle a little flour on a flat surface and pour out the dough. Continue to knead the dough for 8 - 10 minutes.

           Let it rise for 2 hours or more. Look at the picture below:)


If you are busy to bake it right away, put the dough in the refrigrator to let the dough stop from rising until you are deady to bake it.

                    Divide your dough in half and roll it in different pans.

To make your own herbed olive oil. Add 1/2 cups of olive oil in a saucepan heat till slightly warm, remove from heat, add 1/3 cup chopped herbs, let sit over night. I used rosemary basil and rosemary oil.

                                Now that you have your herbed oil.

 
Add the herbed oil and parmesan on top of the one dough, then top with the other dough.
 
 
 
 
                              Heat the oven for 425 degrees.
Egg wash your dough and bake at 425 degrees for 20 minutes.

Love



I have to thank God several times how God blessed me with those precious boys. They give you so much love. They love their sister so much and love God!

We been discussing about baptism several months ago.
We thought they are ready for them to be baptised. Finally, we discussed with the elders of the church and study a few Scriptures. So, yesterday afternoon, I took them to give their testimony. They were nervous and laughing and couldn't even quote one verse.

When my older son was asked, what he thinks about God, He said,"God is The boss, God can do whatever he wants". I laughed and frustrated at the same time. My youngest son, was asked why is he getting baptised, he said,"To be better christian." They wrote their testimony so clear, but when the camera was on, they were nervous.

      I had no words, but to say to the video guy, "Please don't put any of this testimony to the congregation to see!" They said, "No, that is so adorable, this is what we need."

These boys fight, wrestle and laugh all the time. But, if anyone tries to hurt them, they won't allow you. They protect each other very much!

Balsamic & Chocolate Roasted Beet Salad

When I eat food that is bright and great for me, I feel good preparing it. Beet is one of my favorite . Beets are delightful for their color and flavor as well as for their beet nutrition. Their juice is wonderful mixed with carrot juice.
Most people have experienced canned or pickled beets, I love fresh beets. 
Beets are high in folic acid (great for pregnant women), potassium, calcium and antioxidants

Ingredients

2 Pound Red Beets
4 Tablespoons Olive Oil
½ Cup Balsamic Vinegar
¼ Cup Sugar
¼ Cup Cocoa Powder
½ Teaspoon vanilla extract
¼ Teaspoon Salt
Instruction:
 Preheat the oven to 400 degrees. Clean and cut beets into wedges.
Remember, you can also use your stove top. Just make sure you mix them around.
    Place the beets in a small baking dish, cover with 4 tablespoons of olive oil, mixing them so that all slices are coated.

   Cover the dish with tinfoil and bake the beets for about 45 minutes, or until a knife can easily pierce the largest piece.

Using a sauce pan, combine 1/2 cup of balsamic vinegar, 1/4 cup of both sugar and cocoa, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt. Warm it over a medium heat until the mixture combines and thickens.

Remove the beets from the oven, letting cool slightly. Then toss them with the glaze.

Flaxeed Rye Bread

       If there was a a diet that includes bread only, I will be the happiest person:) I love bread that is spread with butter, hummus or drizzle some honey.       

       As I am getting older I wanted to stay healthy and need to create healthier bread. Flax Seed and Rye is great source of fiber. I hope you enjoy it!
 
Ingredients


2 cups bread flour
1 cup Rye flour
1 /2 cup flax seeds
1 cups warm water
1 package instant yeast
2 tablespoon honey
3 table spoon Canola oil
1 teaspoon salt(optional)
 
Instructions


Dissolve yeast in warm water. Add honey, oil and 2 cups bread flour. Stir well. Add Flax Seed and 1 cup Rye flour. Knead on lightly floured surface until smooth and elastic. Shape and put in oiled loaf pan. Let it rise until doubled in bulk.
Bake at 350 degrees for 45 to 50 minutes or until done.
