Strawberry French Toast

I thought I will treat myself with these delicious breakfast. The boys like to eat pancakes and French toast. The boys has been away for a mission trip for ten days, my daughter hardly eats breakfast.
 
I love anything bread, especially French toast, soaked with homemade syrup.

Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the eggs, cinnamon, sugar and vanilla extract until smooth.

Heat a lightly oiled frying pan over medium heat. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Cook strawberry and syrup on medium heat for 20 minutes. Press down with a fork if you want have pieces of strawberries, if you don't blend it after it cools down.

Happy Valentine's Day!


Here is what we had for desserts last night. Chocolate Cake with strawberry frosted and Sugar cookies. I also made Strawberry Muffins.

Chocolate Bread Pudding with Fruit compote

 
 I love fruit compote, I always have, but having picky eater kids, I don't make it often as i would like. I decided to make it this week and share with friends. I was asked to share both recipe. So here it is. I will email everyone after i post it.

  Fruit Compote
  Ingredients:
  • 2 cups fresh Strawberry
  • 2 cups fresh Blackberry
  • 2 cups fresh Blueberry
  • 1 can Pear
  • 1 can Peach
  • 1/4 cup brown sugar or 2 tablespoon of honey
  • 1 teaspoon allspice berries
  • 2 cinnamon sticks

Directions:
In a medium Saucepan, combine fruit, pear and peach syrup and spice. Cook for about 45 minutes in medium heat on stove. You can also bake it in the oven if you like, 350 degree for 45 minutes.

 You can add any fruit you like. If I don't have fresh, I use dry fruit as well.


 
 
Chocolate Bread Pudding Recipe:

Ingredients:
  •  1 large French Bread sliced
  •  8 ounces semisweet chocolate
  •  2 cups of whipping cream.
  • 1 cup sugar
  • 2 cup milk
  • 12 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  • In a small microwave bowl, melt chocolate; stir until smooth. I used tablespoon milk mix with chocolate.
  • In a Small sauce pan heat milk and cream, bring it to boil and set it to cool.
  • In a large bowl, whisk the sugar, egg, vanilla and salt. Stir in chocolate mixture. Preheat oven to 425 degrees. Spread butter on the bread and bake it until brown on both sides. Once it is cool, pour the mixture over the bread. Press down with heavy bowl to help it soak as a picture below. 
  • Let stand for 45minutes. Remove the heavy bowl you used to press down.
  •  Bake at 350° for 1 1/2 hours, until a knife inserted near the center comes out clean.                               

 You can top it with ice cream, but I think it looked good and tasted delicious with the fruit compote.

Lemon Icebox Cookies


This cookies are absolutely to die for! The tangy and sweet taste makes you eating without guilt.

I have four cookie recipes to keep for a long time. If you need all the recipes, I already posted them.


Lemon Icebox Recipe:
2 cups all-purpose flour, (spooned and leveled)
1 cup confectioners' sugar
1 teaspoon coarse salt
1 tablespoon plus 1 teaspoon lemon zest
1 teaspoon fresh lemon juice
1 cup (2 sticks) unsalted butter, cut into pieces
2 large egg yolks
1/4 cup granulated sugar, for rolling
Directions:
In a food processor, pulse flour, confectioners' sugar, salt, and lemon zest until combined. Add butter and process until sandy. Add egg yolks and lemon juice; pulse until dough comes together. Divide dough in half and form each into a 1 1/2-inch-wide log. Wrap in plastic and freeze until firm, about 2 hours (or up to 1 month).
Preheat oven to 350 degrees, with racks in upper and lower thirds. Spread granulated sugar on a piece of parchment; roll logs over sugar to coat. Slice logs into 1/4-inch-thick slices and arrange, 1 inch apart, on two parchment-lined baking sheets.

Bake until cookies are golden brown around edges, about 15 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool.

M&M Chocolate Chip Cookies

 
 I been baking those three recpes for the past two years. Everytime they come out very soft and they are super easy to bake. I already shared Orange Cremesicle and Peanut Butter. 
 
 
 
M&M Chocolate Chip Cookies 
 
Ingredients:
2 cups and 2 tablespoons all-purpose flour
1/2 teaspoons baking soda
1 1/2 sticks butter, melted and cooled
1 cup brown sugar
1/2 cup sugar
1 egg  and 1 egg yolk, at room temperature
2 teaspoons vanilla extract
1 cup Semi-Sweet chocolate chips
 1 cup of regular or mini M&Ms
 

 

Preheat oven to 325 degrees F.

 In a bowl, mix the flour and baking soda together. In a separate bowl, combine the butter and sugars with a whisk. Then add the egg, egg yolk, vanilla and mix everything together. Slowly add the flour and baking soda mixture to the bowl until a dough forms. I used baking spatula instead. Fold in the M&Ms and scoop them into your baking pan. You can add nuts as well if you don't have picky kids as mine.

 
Bake for 10-12 minutes or until edges are starting to get slightly brown. Make sure to give it time to cool down.

Peanut Butter Cookies

 
It is the most wonderful time of the year! My absolute favorite season.
Remember Christ is the only reason for the season.
 My savior, Our Savior is born! The reason why this season is so festival, joyful and full of giving and receiving. It is because God gave His son, Christ the Lord.
He shall be called Emanuel, God in us! May your Christmas be Christ centered as mine.
 
I been baking all kinds of cookies and bars, and I wanted share with you.
 
 
Ingredients:
1 1/4 cups flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup granulated sugar, plus 1/3 cup for rolling
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
1/2 cup creamy peanut butter
1/2 cup salted peanutes, roughly chopped

Directions:

Adjust rack to center of oven and heat to 350° F. In a large bowl, combine the flour, baking powder, baking soda, and salt; set aside.

 






In a bowl, with an electric mixer on medium, beat the butter until light and fluffy. Add 1/2 cup of the granulated sugar, the brown sugar, and vanilla and beat until incorporated. Add the egg and combine, then add the peanut butter. Reduce speed to low, add the flour mixture, and beat until incorporated. Stir in the peanuts.
Form the dough into 1 1/2-inch balls. Roll in the remaining sugar and place on a baking sheet, 2 inches apart. Using the back of a fork, gently press the cookies to form a crisscross pattern.
Bake 12 to 16 minutes or until just golden. Cool on racks.

Orange Cremesicle Cookies


This cookies are amazing! I love that orange flavor. This will make a great gift after I enjoy myself with a cup of tea.

Ingredients:

2 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1/2 cup sugar
1/2 firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons orange zest (for me that was the zest of 2 oranges)
2 cups white chocolate chips


 
Instructions:
Preheat oven to 375 degrees.

In a small bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in orange zest and white chocolate chips.
Drop rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry. Bake 8 – 10 minutes or until golden brown around edges. Do not overcook! Cookies will be plump. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.

Brownie in a jar

It's beginning to look a lot like Christmas. Wrapping gifts while the kids are away, mailing Christmas cards, baking and giving. I love receiving gifts, but I get joy when I give. Especially baking, I think of the person I am going to bake for and I pray for their family. I am so blessed with great friends and neighbors. God's hand is truly in my life.

I found this recipe from myrecipe.com. It looks easy and yummy.





Ingredients:

1/2 cup walnuts
1/2 cup white chocolate chips
1/2 cup semi-sweet chocolate chips
2/3 cup brown sugar, packed
1 cup plus 2 tablespoons all-purpose flour
1/3 cup baking cocoa
2/3 cup granulated sugar
1/2 teaspoon salt

                                                                                               Pin It Preparation:

Layer all ingredients in order listed in a one-quart, wide-mouth jar, being sure to pack down after each addition.

Secure lid and attach baking instructions and a gift tag.

Instructions:

 Empty brownie mix into a large bowl. Add 3 eggs, 1/2 cup oil and one teaspoon vanilla extract. Pour into a greased 9"x9" pan. Bake at 350 degrees for 22 to 25 minutes. Cut into squares. Serves 6 to 8.

Blue Berry Cheese Cake

Originally, this recipe is Aunt Ginger's and I changed a little by baking it in water bath. I remeber when I first ate it, it was thanksgiving dinner and I was pregnant with my daughter Emily. Atleast, I ate 3 big slices and now my daughter is crazy about cheese cake.

Ingredient:

Crust:

33 graham cracker squares, crumbled

1 stick unsalted butter, melted

Filling:

20 ounces cream cheese

1 1/4 cups sour cream

1 cup sugar

1 tablespoon vanilla extract

2 eggs

3 yolks

1/3 cup heavy cream

Preheat oven to 300 degrees F. In a small bowl, combine crumbled graham crackers, and melted butter. Press 2/3 of the mixture in the pan. Place remaining crumbs on a sheet pan and bake both the crust and the remaining mixture for 10 minutes. Cool. Reserve additional crumb mixture for sides.

In a mixer , beat sour cream for about 30 seconds. Add the cream cheese and sugar and mix on low for 30 seconds and then turn up to medium. In a separate container, combine vanilla, eggs, yolks, and heavy cream. In the mixer slowly pour the liquid mixture in. Continue adding the mixture until the rest of the ingredients are incorporated. Once completely combined, pour into the cooled crust.

Lower oven temperature to 250 degrees . Place cheesecake into a preheated water bath, in the oven for 1 hour. Turn the oven off and open the door for one minute. Close the door for one more hour. Remove the cheesecake from the water bath and place in the refrigerator for 6 hours to completely cool before serving. When you ready to serve it, put the pan on hot water pan, it will be eay to slice smooth. you can top it with any fruit you enjoy.
